
I am all about doing things when I have the time to save the time when I don't have time...if that makes any sense :). I love to have cooked meat in my freezer to throw into recipes so I don't have to take the time to cook it when I want to make it. I do this with ground beef,
which I posted about a few months ago.
Here is the chicken version:

I took this 6.5 pounds of chicken and separated it. I pulled out 6 chicken breasts and cooked in a non-stick frying pan with no oil.

When it was cool, I diced it a put it in a bowl.

I then put it into meal sized portions (about 1 cup) into
ziploc baggies. I also took some raw chicken breast and put into a freezer bag 3 pieces for a meal to
barbecue, bake, or whatever. For the rest of it I made
Apricot Chicken. This is a recipe we eat a few times a month, so I have it all made so I can thaw it and put in a baking dish and bake.

I put all of the cooked, cubed chicken in small
ziploc bags, then pull all of those into a 1 gallon freezer bag. When I am cooking, I just grab what I need.

So, that's what I do with my chicken and it works for me!

I love doing this! We are getting a chest freezer soon and I can't wait to fill it up with goodies. Is it sad that I get so excited about meat in the freezer? ;-) Well, I guess it isn't so much the meat I get excited about - it's the time and sanity saved. You can't beat that!
The apricot chicken sounds good - I'll have to add that to my list recipes to try out!
I don't have a freezer yet and I want one so badly. One of these days I'll find a deal that I can't pass up!
