Menu Plan Monday - week of November 17-23

I have been toying with the idea of participating in Menu Plan Monday with orgjunkie.com, but I have never been much of a menu planner. I do think that it will help me stay on task with using my stockpile and to not eat out (especially on the days that I work). I also hit the jackpot today, my in-laws had us over for dinner tonight and had ham, corn, and cheesy potatoes (yum!). they offered me the rest of the ham, which was a sizable amount. I'll cut it up and freeze a lot of it, use some for sandwiches for my hubby's lunch, but I also want to incorporate it this week. Here is my tentative plan for this week (I may end up switching days, but you get the gist :)).

Monday (this is a day I work) - Haystack Casserole in the crock pot.

Tuesday - Tacos

Wednesday - (this is also a day I work this week) - Grilled Cheese sandwiches, tomato soup

Thursday - Chicken Cordon Bleu Casserole - this is just something I made up from some other recipes, but it is really yummy. Take about 1 cup each of cooked cubed chicken and cooked cubed ham. Place in the bottom of an 8x8 casserole dish. Add 1 can cream of chicken soup and about 1 cup grated Swiss cheese (or whatever cheese you have). Stir. Prepare 1 box of Stove Top stuffing according to package directions. Pour over the top of the ham/chicken/cheese/soup mixture and bake at 350 for about 30 minutes.

Friday - Lasagna

Saturday and Sunday - these are leftover nights for us.

Of course I will add veggies and/or bread as needed to these meals.

I hope this helps me to stay on track!

your recipe the casserole sounds great....I make something similar, without the swiss cheese, and now I want to try! YUM!
