I don't know about you, but I always have a box of Bisquick around. I love it for making biscuits and strawberry shortcakes. Yum. Anyway, there are several recipes that you can find online or on the back of a box of Bisquick for cheeseburger pie or similar. I have found that you can make a lot of variations of these with great results. They end up as sort of a crust less quiche. The standard ingredients are:
1 1/2 c. milk
3 eggs
3/4 c. Bisquick
Pour this over the top of your choice of ingredients that you have placed in a pie pan.
Bake for 30 minutes at 400.
Here are some options for fillings:
Cheeseburger Pie:
1/2 lb ground beef (browned and drained)
1/2 c. chopped onion, sauteed
1 c. cheese
Ham and Cheese Pie:
1 c. diced ham
1 c. cheese
1/2 c. chopped onion, sauteed
Broccoli Chicken Pie:
1 c. chopped broccoli
1 c. cheese
1 c. cooked cubed chicken
1/2 c. chopped onion, sauteed
Bacon and Swiss Cheese Pie:
4-5 pieces cooked crumbled bacon
1 c grated Swiss cheese
1/2 c. chopped onion, sauteed
Some options we haven't tried, but sound good might be:
ham, cheese, and corn
broccoli and cheese
pepperoni and mozzarella cheese
Anyway, the sky is the limit for what you can make. This is also a great way to use up leftovers!

This sounds so good today - I vaguely remember a recipe like this from jr hi home ec class a million years ago. I just might give it a try for dinner!
