Works for me Wednesday - Leftover Mashed Potatoes

I love potatoes. They are seriously one of the very best cheap foods out there. I live in Idaho...so maybe my potatoes are even cheaper. I recently got 15 pounds of potatoes for $2.49. That is only about $.17 per pound!


Today I want to focus on mashed potatoes. Whenever I make mashed potatoes, I always make extra for future meals. They are so yummy and versatile. They also freeze really well. I have been known to put use an ice cream scoop to scoop some potatoes onto a cookie sheet, let harden in the freezer, then put into a freezer bag. When I want a quick side dish, I just grab a few scoops and microwave. Easy! Here are some of the other great ways you can use leftover mashed potatoes:

++Hamburger or round steak stroganoff - use mashed potatoes instead of egg noodles. YUM!

++Shepherds pie

++Mashed potato hot dogs - sounds gross but they are really good! My husband grew up with this. You basically split a hot dog in half open it and put a few scoops of mashed potatoes on top. Top with grated cheese and bake until the cheese melts.

++Recently I made a concoction of cut up polish sausage put into a small casserole dish, topped with mashed potatoes and cheese and baked until the cheese melted. My family LOVED it!

My grandma always made mash potato hot dogs and they were the best. Everyone does tend to think I'm weird when I tell them about it though. Glad to know I am not alone.

we fry up some garlic in butter then add the potatoes til they soften up. it's really good.
