Menu Plan Monday - Week of April 6-12

Last week was a terrible week! Terrible, terrible, terrible! I won't go into details, but did I mention that it was terrible? Oh, and I didn't make ANYTHING on my menu last week. ANYTHING! Guess what we did several days...FAST FOOD! Ugh, I am so mad at myself on so many levels.

There. I feel better.

I want/need/must do better at the plan this week. I work on Monday and Tuesday so I'm keepin' it simple. Here is our menu plan that we will stick to this week. All the organized blogger people also have some great menu plans to share...check it out at orgjunkie.com.


Monday: Tuna Noodle Casserole, veggies

Tuesday: Sloppy Joes (these are in the freezer!), fruit salad, cottage cheese

Wednesday: Polish sausage, boxed potatoes, green beans

Thursday: Hawaiian chicken, rice, broccoli

Friday: Pizza night (anyone have some great topping ideas? I am getting sick of the same old, same old)

Saturday: This is a CRAZY day. My cousin is getting married in the morning, then a baby shower, then my cousin's luncheon, then the reception. We'll all just eat when we can. :)

Sunday: Happy Easter! We are having a family BBQ. I am bringing potato salad and deviled eggs!

Hmm... pizza toppings... bbq sauce, chicken (thinking leftover Hawaiian chicken from Thurs), red onion and cheese or if you want to get fancy, olives and rosemary with pizza sauce and cheese or caramelized onion, goat cheese and pears. Yum!

I make a chicken, bacon, artichoke pizza. . . my favorite! Spread a little white sauce, sprinkle mozzerella, cooked chicken, bacon, artichoke, cheese again.

don't beat yourself up so hard...we've all been there. Climb back up on the wagon---it's a new week---sounds like you have a nice plan.

Pizza ideas-
Breakfast pizza
Ham, pineapple and mandarin oranges
bbq sauce, chicken, bacon, red onion
alfredo sauce, fresh tomato slices, spinach, and feta cheese
